Nyonya Style Pork Stew

My late grandma used to make this dish, we called this "Babi Kecap"and after I wacthed S'porean series "Little Nyonya" there's one dish called Babi Pongteh, similar to this dish, I guess is the other version of Indonesian Nyonya dishes since my grandma is Peranakan desendance , I'd say the ingredients is more simple than babi pongteh, but taste as good only different version.

Ingredients:
250gr Pork shoulder,(with fat and skin), cut into cubes
5pcs shallot, finely chopped
5pcs garlic, finelt chopped
6 tbsp sweet soya sauce(kecap manis), if u like sweet, u can add more of kecap manis
1 seed thai tamarind
5cup water
½ tsp salt
½ tsp pepper
Side dishes:
½ block firm tofu, cut into square
2pcs boiled egg
2pc dried shiitake mushroom, soaked in the hot water for 30 min


Directions:

Heat 2 tbsp of cooking oil, add the shallot and garlic until fragrant then add the pork, cook until the color changed(or until the water come out from the pork), then add kecap manis, tamarind, pepper, then add the boiled egg, mushroom and tofu, stir through then add water, let it boiled turn down the heat then simmer it for about 2H until the pork softened, and leave the broth for about 1cup.(It’s even taste better when you leave it overnight)

DIMSUM CHICKEN FEET


If you like chicken feet here's the recipe, need more preparation but worth to try..

Ingredients:

1kg chicken feet -make sure you remove all the nails:)
3tbsp light soya sauce
1pc fresh chili, chopped (OPT)
2tbsp cooking wine
1tsbp five spice power (wu xiang fen)
8 cloves garlic
2tbsp oyster sauce
2tbsp hoisin sauce
2tbsp black bean
2tbsp sesame oil
Sugar, salt and pepper (to taste)
Water
Cooking oil for deep frying

Directions:

1. Drizzle chicken feet with key lime juice, leave it for a while, then drain
2. Deep fry chicken feet (make sure using the splatter)
3. Prepare a big bowl of ice water, put the fried chicken feet into the ice water right away
4. Using the pressure cooker, put the chicken feet inside add all the spices then add water (make sure the chicken feet is cover with water) then cook with high heat about 15-20min, leave some brooth, don’t make it too dry
5. Ready to serve (better taste if leave it overnight)..

Ice Kachang

In Asia there are many kind of dessert ice, in Indonesia we called it "Es Campur" (mixed ice), Ice Kachang named because the main ingredient is bean (Kachang)
Great dessert for the summer, very refreshing, enjoy...

Ingredients:
250gr red bean,soak for 1-2 hours
250gr sugar
Water
Fresh/Canned jackfruit
Canned fruit coctail
Grass jelly
Nata de coco
Condensed milk
Rose flavor syrup
Basil seeds (Selasih) presoaked in the water
Shaved ice
Directions:
In a pressure cooker add red bean,sugar and water (make sure red bean are fully immersed in the water)
Cook for about 30min until the bean softened
Dice all the canned fruits
In a bowl take each kind of fruits about 2 tbsp then add the shaved iced last topped with condense milk and rose syrup.

BALADO UDANG KENTANG ASPARAGUS

If you like spicy food, this can be your choice..

Ingredients:
2 medium potato, diced then deep fried, put aside
250gr (1/2 lb)prawn
6 stems asparagus, cut 5cm length

Spices:
5 cloves shallot
3 cloves garlic
5pc fresh chili
1tsp coriander powder
1tsbp sugar
1tsbp palm sugar
1 medium tomato

Directions for the spice:

Pound all spices using mortar of food processor
(tips: if u like u can make the paste in large amount then keep it in the fridge, it can last for about 2 weeks)

Cooking Directions:
Heat 3 tbs cooking oil, fry the paste until fragrant, then add the prawn, stir thoroughly add the asparagus, add a little water, close the lid for 1 min, then last add the fried potato stir thoroughly. Ready to be eaten with warm rice..

TAHU KIPAS

Tahu Kipas(Tahu Isi)


"One of traditional Indonesian dishes,originally made to be vegetarian, ..Called Tahu Isi (Stuffed Tofu) because it filled with vegetables, but when a famous restaurant add prawn to it then it become famous as Tahu Kipas..Both version are taste as good..Real soulfood:)"




Ingredients:

6pc fried tofu (see pict below)
1pc carrot, julian
2pc green cabbage, Julian
5tbsp bean sprout (around 50gr)
10pcs prawn, cut into small sizes
1tsp chicken salt
2pc garlic, minced
A dash Salt dan pepper
¼ tsp sugar

Directions:
Heat 2 tbsp oil ,fry the garlic until brown then put the prawn, stir fry it until color changed, then put carrot, green cabbage and bean sprout last add salt pepper and sugar, turn off the heat, put aside. (see left pict below)











Batter:
100gr all purpose flour
2tbsp rice flour(opt)u can leave it if u don’t have it
Dash of pepper and salt
Water
*Mix all the ingredients to make batter, put water little by little, make sure it’s not too runny

Directions:
Cut 1 side of tofu to create a hole then fill it with the stir fry vegetable, after put it in the batter and deep fry it until golden brown.
Eat with “sambal kecap” or chili sauce, thai sweet sauce

Sambal Kecap:
Chop 2 pcs thai red chili , then add kecap manis (sweet soy bean sauce)

SIOMAY BANDUNG



Siomay Bandung

Very popular street food in Indonesia, everybody likes it..(one of my favorit food too^^). Originally from Bandung and Influenced by Chinese siumay then modified it more into local taste. To be eaten with peanut sauce, Kecap manis, Chili sauce mmm yummy..

Makes: 20 pcs

Ingredients:

200 gr king mackarel,minced using food processor
200 gr prawn, minced using food processor
150 gr tapiocca starch
1 stalk spring onion, finely chopped
100ml ice water

1 egg white


Seasoning: (crushed them in a mortar or using food processor)

3pcs garlic,

1/2 tbs chicken salt

1/2 tbs salt(or to taste)

1/2 tbs white pepper



Side Dishes:

3 pcs green cabbage, remove the middle bone then soak with hot water, to make it more flexible when you roll it.

1pc medium size bittergourd, cut about 5cm(2") lenght, take out all the seeds

2pcs boiled potato

Directions:

1.Mix all the Siomay ingredients and seasoning in a bowl, Knead lighty untill it mixed through, add the chopped spring onion.

2.Make meatball shape using spoon (about medium tomato size).

3.Fill bittergourd with the mixture

4.Spread 1 pc of green cabbage, put 1tbs of the mixture, then roll the cabbage

5.Put all the siomays, bittergourd in the steamer, steam with high heat for about 20-25 min.

Kecap Manis

Peanut Sauce
Serve it with peanut sauce, Indonesia sweet soyabean sauce(kecap manis) and chilli sauce. sprinkle with lemon/lime


Peanut sauce:


1. You can buy ready Indonesian peanut sauce in asian supermarket.then mix it with water or


2.If you cant find ready peanut sauce you can use peanut butter, add water and garlic powder.

TORTILLA HAM ROLL

Today, another Tortilla dishes (the reason is I still have plenty of them in my fridge so have to think what im gonna do with them) and inspired with arby's new menu called fried burrito something, if im not mistaken..and again no brainer level of cooking, Good for quick snack or party..


Ingredients:

8 pcs Tortilla
2pc boiled egg cut into ¼
16 pcs Smoked ham, cut into strips
Mayonnaise
Cilantro
Direction:
Lay 1 pc of tortilla, add ham, eggs topped with mayonnaise then roll it as you make spring roll, since its skin is pretty thick and easy to open up, you need to secure it with toothpicks, then deep fried them till golden brown.Cut into 3 pieces slip in cilantro. It more delicious and refreshing to be eaten with slice of cucumber. Add hot sauce if you like^^(sauce suggestion: chillisauce, mayonaisse, thai sweet sauce)

PIZZA TORTILLA

PIZZA TORTILLA
Very easy recipe to make,the good thing is, you can control on your topping, especially for keeping weight^^ (less cheese, vegetarian topping bla2..),no brainer at all:)

Ingredients:

2pcs Flour TortillaSpaggethi sauce(any flavour, any brand,up to you)
Topping

As i mentioned before, you can put anything on top of your pizza, but the ones i use are:

-2pcs Sausage,sliced

-1/2 pc Onion finely chopped2 slices

-Smoked ham

-Mushroom

-Sundried tomato

-Mozzarella Cheese(opt: you can add green pepper,corn, tofu,minced meat, tomato, prawn, imitation crabs, many more..)


Methods:
1. Spread tortilla with spaghetti sauce then
add all the topping, last part cover it with cheese

2. Preheat the oven 375'F for 5min, then put the pizza, bake for about 7-12min depend how crunchy you want your pizza to be (my tips go for shorter mins first then you can add more min if needed,you dont want your piece of art to get burn:)

3.Serve while hot^^

Corned Beef Tortilla Rolls

"My first posting here so i rather start with something very easy, and it's great snack for party"


Ingredients:
8pcs Tortilla, i use flour
½ can corn beef
Mashed potato (from 1 big potato)
2pcs boiled egg cut into ¼
Opt: 1 pc chilli finely chopped
½ pc Onion diced
¼ glass of Milk
Dash of pepper and dash of nutmeg
Salt (if needed, since the corn beef its self salty already


Methods:
1.Heat 2 tbsp of oil in the pan then stir fry garlic, onion and chilli till golden brown, then add pepper, nutmeg later add corn beef, milk and mashed potato. Stir evenly, Turned off the heat

2.Lay 1 pc of tortilla, add the mixture of corn beef then roll it, like Chinese spring rolls (both side of the roll is folded) then secure it with toothpicks. Fried until golden brown.
3.Cut into 3 pieces and Serve it hot (sauce suggestion: Chili sauce, Thai chili sauce, mayonnaise)
